"The faster the hummus the better." Nobody ever said or even thought this, so perhaps it's time we stopped eating those sad little snack-sized hummus containers. A better way: The Hummus and Pita Co., a quick and painless pan-Mediterranean job in Chelsea, serving a variety of ingredients (falafel, schwarma, gyro, taboon, chicken, steak), in a variety of ways (pita, laffa, bowl, platter), with a variety of fillings (hummus, grilled veggies, tabuleh, grape leaves, so on), plus toppings and sauces like harissa and tahina—all done assembly-line-style (aka Chipotle-style).
